RECIPE BY: CHEF JOHNSON
Ingredients
Dough (makes two 14" pizzas)
4 ½ cups (575g) bread flour
1 ¾ cups (415ml) warm water (about 105°F)
2 tsp sugar
2 tsp salt
2 ¼ tsp active dry yeast (1 packet)
3 tbsp olive oil
Sauce
1 can (28 oz) whole peeled tomatoes (San Marzano if possible)
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil (optional)
1 tsp sugar
Salt & black pepper to taste
Topping
16 oz whole-milk mozzarella (low-moisture), shredded
Fresh basil leaves (optional)
Olive oil for drizzling
Parmesan for finishing
Step 1: Make the Dough
Start with the base that makes New York pizza famous — a crust that’s crisp on the outside, chewy on the inside.
Combine warm water, sugar, and yeast in a small bowl. Let it sit until foamy.
Mix flour and salt in a large bowl or stand mixer. Add the yeast mixture and olive oil.
Knead for 8–10 minutes until smooth.
Place in an oiled bowl, cover, and let rise for 1–2 hours.
Divide into two balls, cover, and let them rest while you prep the sauce.
Grandeur Tip: The even, steady heat from your Grandeur oven helps the crust bake up golden without burning, giving you that authentic NY bite.
Step 2: Make the Sauce
New York pizza sauce is simple and flavorful — no need to overdo it.
Heat olive oil in a saucepan over medium heat. Add garlic, sauté briefly.
Crush the tomatoes and stir them in with oregano, basil, sugar, salt, and pepper.
Simmer uncovered for 20–30 minutes until slightly thickened.
Step 3: Assemble Your Pizza
Preheat your oven to 500°F. If you have a pizza stone or steel, place it inside to heat up.
Stretch your dough into a 14" round.
Spread a thin layer of sauce, sprinkle mozzarella, and drizzle with olive oil.
Add basil leaves if you like a fresh, herby touch.
Step 4: Bake to Perfection
Slide your pizza onto the hot stone or baking sheet. Bake for 7–10 minutes until the crust is golden and the cheese bubbles with light brown spots.
Step 5: Serve Like a New Yorker
Let your pizza rest for a couple of minutes, sprinkle with parmesan, slice it up, and — of course — fold your slice in half before taking that first bite.
