Classic Meatloaf Recipe

Meatloaf is one of those timeless comfort foods that always makes the table feel complete. Juicy, tender, and topped with a sweet and tangy glaze, it’s a dish that never goes out of style. The best part? It comes together with simple ingredients you probably already have at home. Ingredients

For the Meatloaf

  • 2 lbs ground beef (80/20 works best)

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • ¾ cup breadcrumbs (plain or Italian)

  • ½ cup whole milk

  • 2 large eggs, lightly beaten

  • 2 tbsp Worcestershire sauce

  • 2 tbsp ketchup

  • 1 tsp dried thyme (or Italian seasoning)

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 tbsp fresh parsley, chopped (optional)

For the Glaze

  • ½ cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp apple cider vinegar (or white vinegar)

  • 1 tsp Dijon mustard (optional)

Step 1: Mix the Meatloaf

  1. Preheat your oven to 375°F.

  2. In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.

  3. Add ground beef, onion, garlic, eggs, Worcestershire, ketchup, thyme, salt, pepper, and parsley.

  4. Mix gently with your hands or a spoon — just until combined. (Overmixing can make the meatloaf dense.)

Step 2: Shape the Loaf

  1. Transfer the mixture to a parchment-lined baking sheet or a lightly greased loaf pan.

  2. Shape into a loaf about 9x5 inches if free-forming.

Step 3: Add the Glaze

In a small bowl, whisk together ketchup, brown sugar, vinegar, and mustard. Spread half of it evenly over the meatloaf before baking. Reserve the rest for basting.

Step 4: Bake

  1. Bake the meatloaf for 45 minutes.

  2. Remove from the oven, brush with the remaining glaze, and return to bake another 15–20 minutes.

  3. Meatloaf is done when the internal temperature reaches 160°F.
